    This is the matching gyuto in CPM-M4 with a hand sanded finish. M4 is hellacious to sand. This is 248mm with double dyed box elder and carbon fiber.
     
  4. Here is Chef Chris Shepherd (Beard 2014, Underbelly) with the 205mm CPM 20CV gyuto I made him with Texas/Texans colors with dyed box elder Burl, blue twill bolsters and red/white/blue G10 trim. Chris is one of the biggest boosters of Houston and Houston cuisine and it’s insane diversity. Practically everything is sourced within 100 miles of Houston or at least Texas.

    240mm CTS-XHP gyuto with CPM 154CM 100mm paring set. Both sporting ancient bog oak handles with mammoth tooth bolsters. Matching sayas. The welting is fitted internally to the blade shape.

  10. This is the king of cutlery steel. It is a 150mm tactical/hunting in CPM Rex 121, 10% Tungston and 9.5% vanadium. It’s probably the most difficult steel to sharpen by hand but has beyond insane edge holding. Handle is Blackwood carbon fiber bolsters, red/black Carbon fiber and G10 handle.

    This is a 240mm CPM S110v gyuto with mammoth tooth bolsters and dyed box elder Burl.

  13. 245mm CPM S110V k-tip gyuto with blue box elder Burl and blue dyed mammoth tooth bolsters. This matches the decor of a new restaurant around here and a large mural of it will be incorporated into the decor.

  14. Damasteel 165mm bird and trout with box elder Burl and red Micarta scales. A more free form handle. This was a scrap piece from a larger billet of steel. Waste not, want not.

  15. 210mm CPM 20CV super steel k tip gyuto in progress. Hand sanded like a true masochist. Stoooooopid thin at .003” on the edge before sharpening. Handle tapered as well. This will go with me to the Houston BBQ throwdown where I will be working on the line with one of my friends who is an amazing chef. It will he for sale thereafter.
