I am so happy to be seeing pictures of Jim's food again! Except that just looking at them makes me break out in fat.

To some of you it may look like this is what I live on. But no . . . just my third time making some red beans and rice.

It looked prettier before I put the lamb on the plate and schmeared the mustard-based coating all over the place, but it was still dandy--rack of lamb (yay, spring!) and potatoes roasted in butter and rosemary/lemon/garlic flavored olive oil. And plenty of sea salt.

(I'm trying to drop & drag the image--hope it works!)

And it did not--so here it is after editing:

Didn't have time to take any picture of finish dishes, way too late and too hungry. Only took some pictures while breaking down a 2.5kg hiramasa.

No pics, things are in containers already, but I roasted a chicken (spatchcocked, with butter and chimichurri under the skin, maldon all over, in a pan), a rustic potatoes dauphinoise (the same as a regular dauphinoise, but no care given to shape, everything just packed in), with sautéed baby radish and turnips. Pretty tasty. Will be good leftovers, too. The wife is away visiting friends on the east coast, so I have license to make the fatty foods she frowns on. :)

Salt grilled Hapuku head, and griddle grilled Hapuku body with sweeten soy and dashi, something quick for a week night.
