  7. Thanks everyone. I'm just getting started with nicer knives & hand-sharpening. Looking forward to it. I've ordered some Japanese-style knives to try out, to see if I like them enough to have some custom ones made.

  10. I've ordered three Tojiro DP knives. These are basically just to play with, and see how my wife & I like the basic designs. One of these is the Honesuki, which will be the first knife I've had that is only sharpened on one side, so that should be something. The other are a pairing and a Santoku.

    Once we settle on the knifes we want, and their sizes, I'll have a small set (three or four knives) custom made, as I really like the looks of some of the knives being made by a couple of people. And whereas 'pretty' doesn't impact performance, pretty is fun! Plus, I may want a steel other than I can get with the designs I may want, so another reason to go custom. I know almost all of the steels out there are pretty nice, but, I can be picky.

    If I'm not mistaken, the Tojiro DP honesuki is double beveled. (It's the middle knife in this picture).
