  4. Wakui White2 Hammered or Ginsan.. Heard ginsan acts like stainless but sharpens like white... sounds too good to be true lol. Also the Masashi Koi.

    You may want to look through the knife makers galleries on this forum for ideas. Nothing beats working directly with a maker to get exactly what you want.
