  2. Thanks for having me.

    I am a true newbie. I have been doing a lot of reading and watching and have learned much. I am sure there is much more to learn. I recently purchased my first "real" knives. One a Watanabe 180mm "long petty" that is an amazing piece of work. Actually makes food prep fun. I also have a custom 7" chef's knife from CT Knives in Idaho. What a beast, made from an old saw mill blade. I also have some older Henckel 5 Star knives I have been using since 1985 or so. Broke my favorite one, a 6" chef's, a year ago simply by dropping it on the floor. I also recently invested in some higher end sharpening stones and tools. I plan on resurrecting my remaining Henckels while maintaining the new knives. I also am in the market for a shorter petty and a 240mm gyuto. I may stick with Watanabe but I am also looking at custom makers here in the US like Martell, Carter, etc.

    Anyhow, that's my story.
