  2. Worked in kitchens for over 20 years but never got that educated on knife sharpening. Just enough to get me by. Could shave hair off of my arm but all of the new stones and Japanese knives are new to me. I do enjoy learning and watching YouTube videos, and have started my whet stone collection! Thank you for having me! Presently I am having difficulty getting a proper edge on an older conventional German Blade boning knife - the curve by the handle is hard to get a good edge on and am looking for suggestions!
