  1. If you have the patience, try the same procedure but cook them at 173 for 72 hours. Yes, 72. It will change your life!
  2. Cheers for the tip... been looking to try some super slow sous vide goodness... longest I have done is 10hrs for pork belly buns... and that was amazing.
