Single bevel vs Double bevel knives

    i never understood the 3 layer then grind away one that is going to put all kind of stress in the blade. its better to have 2 layers and pre warp for HT then asa it cools make sure its straight. its going to move around a bit as you grind anyhow and they have straighting "sticks" to bend the blade back into flat. those dont work on mono steel blades less you clay coat and have a soft spine. and on mono steel stainless or higher none water quench steels dont even think about bending back to shape if things get out of flat post HT you just hav eto learn to "grind it straight" and thats not nearly as straight forward as it seems
