Search of a Perfect Burger - Heston Blumenthal

  1. I am a Heston fanboy :p



    However, for every 10 people there are probably 20 approaches of making a burger. I'd love to hear your thoughts of burgerizing. He's doing one pretty controversial technique in there, flipping the patty every 20-30 seconds - thoughts?

  3. I grind a combo of chuck, sirloin, short rib and bacon. Not sure what to make of the constant flipping......

    I think it was Harold McGee who came up with the constant flipping method as providing the juiciest most evenly cooked burger.

    We use the same technique at my work for making the patties. All the meat strands are pulled out along the table in the same direction and then wrapped in plastic wrap, creating a giant meat log. We then cut 8 oz patties out of it.

    Granted it wont be as decked out as those burgers, but I'm craving hard :)
