The only thing I use when I have something on there is kosher salt on a damp cloth. If I really go to town on it I may have to retreat with some wax or oil.

If things are really bad, on top of the salt, I use half a lemon as my scrubber. I find that the acid helps cut through big messes. After scrubbing and letting it sit 30 minutes, I just have to wipe it down, let it dry, and then re-oil.

Household bleach diluted one part bleach to five parts water will chemically neutralize the capsicum. The result is salts that are easily washed away.

You really don't think the bleach will lighten the color of the wood?

  7. I've used bleach extensively...and it doesn't do anything in my experience except kill germs and neutralize food acids. Maybe straight it might be powerful enough to stain or otherwise discolor, but properly diluted it's pretty harmless.

It's not speculation. I've used diluted bleach on my cutting boards for many years with no issues.
