New Pots And A Long Weekend

    so this morning we started off and th some ham in a pan

    Then some eggs in the DB, added the ham, leftover bacon from the seasoning season amd some cheese... oh and S&P

    It kind of burst at the fold during the flip, I may have over stuffed the centre.... and myself for that matter. heres to coffee and juice

    man that was tastey... but with the ham amd bacon I should have skipped the pinch of salt lol

    so lets talk tonights game plan...

    not a first cut, and i dont have the short ribs but the marbling seemed okay... its pretty thich I would normally take it to the grille but I wanna try something different. Right now im letting it even its temp out of the fridge, going to cover with S&P and braise it in some olive oil in thr DB pan, Then ill deglaze with some red wine (yes I have some now) and take the roast drippings to a waiting dutch oven... Ill add some of the carrot, celery, and onion here to soften amd flavour, a tbsp of flour when that happens and a little bit of water and add the roast back in and cook till tender (with the bones I was thinking to cook it longer then a rare cut to make it extremly tender but stull unsure about that) them strain out the veggies from the juice return liquid to the oven with the rest of carrots onion and celery and finish the roast off

    I've never tried this with this cut before so im not sure what ill get, hopefully its good

    i don't drink wine.... usually i use some to com and three days later pour out the rest lol, but that bottle got emptied somehow... now I just have to wait until Christmas for new bottles to magically appear at work and boxing day at grandmas
