Matt's 220mm W2 Honyaki 'XH' Gyuto

  1. Hello everyone! First I want to say that this knife, is a serious cutter lol. It was also one of those builds that started out as a low key, simple spacer arrangement type deals...two brass liners and one thin piece of wrought iron. Next it was two pieces of wrought, then two pieces of wrought and a piece of mokume lol. I can't imagine where it might have ended up if the blade had taken any longer to finish lol! Seriously though, Matt has been great to work with. I find that often my customer's enthusiasm fuels my own (which is usually overflowing anyway lol), and each project becomes a joy to work on. When that happens, you can absolutely see the result in the final product.

    Steel: AISI W2 tool steel from Aldo Bruno at New Jersey Steel Baron

    Handle: Spalted Oregon Maple from Mark at Burl Source, with brass liners, copper nickel mokume, and 150yr old wrought iron from Globe Elevator in Wisconsin

    Also, this knife is 50mm on the heel, and weighs in at 7.9oz (225g) lol. For comparison, Marc's 250mm x 58mm XH gyuto was 8.8oz, and the passaround which is 265mm and 50mm on the heel, is only 6.4oz. She's a porky little girl for sure!!

    The next one I'll be finishing over the weekend is going to have nickel silver mokume also...but it'll be something...else ;).
