    besides the shape, what is the difference between the two bread knifes? (the 2nd and 3rd ones on the round block)

    The second knife from the top on the round board is your garden variety Henckels 4 Star 8" bread knife. The knife below it is a 10" hollow ground knife of the same brand, also known as a ham slicer. It's good for slicing gravlax, brisket, and roasts, but it doesn't see much action these days, as it was from my not-knowin'-no-better phase.

    The top knife on the rectangular board is a bread knife, and a killer at that, by Mac.

    I have the top two Henckels. The Mac (?) knife is one scary looking bread knife!

    The santoku and the bread knife, correct?

    That santoku is over twenty years old, and I don't know if I used it more than a handful of times. Not sure if I ever even sharpened it.

    The Mac bread knife is alternatively touted as one of the only bread knives that can be resharpened or as one that cannot be resharpened. I imagine it depends on whether you're buying one or asking for one to be resharpened.

    if santoku means chopper - yes.

    It occurs to me that I'm woefully under educated when it comes to Japanese knife names.
