Have you been in the forest lately?

    Here, the season is about to be ending.

    Now they are getting dried in preparation for christmas period. I dont usually make conserves but will go and check what the forest grocery have to offer today

    Ours is already over. The haul was light this year, it got too hot too fast. The chantrelles never really took off, and the oysters were really woody.

    They differ pretty wildly from really strong and earthy to mild and more of a texture and absorber of flavor. They also vary from their fresh state to dry, and the same species from place to place. You are deep in morel and hen of the woods country, probably some chantrelles too. Maybe candy cap too, I haven't really foraged that area. Some guy in TN is having varied success cultivating Perigord truffles, though he would likely shoot your ass if you tried to forage them. Also field guides, and visits to extension agents, don't get sick!

    Oh I have no plans to forage.

    I've tasted mushrooms on pizza, in soup, fresh mushrooms, fried mushrooms. Never liked any of it.
     
  7. Remember your thread about failed Mexican. You are eating the mushroom equivalent. Sorry for the bad news but you are missing out.

    Ps. I am talking about the white button used every where. In oz I go for the Asian varieties and they are loads better.

    Even if you don't eat them, it's a nice walk or canoe in the woods and you can sell them for 10$+/#
