    steel : sanmai , soft steel cladding ( not stainless ) and 145sc , water quenched .

    handle 140mm , Oak.

    i post on my web site at French time ( what is it in réal english ? ) , and ( hopefully) nothing stay long time in my site :D

    i think i have to do more short blade, i love 270 gyuto , but i think less than 200 is more easy for evryone .
