    Would not be selling, however, need funds for new project. Truly enjoy both of these knives, just don’t see enough time in the rotation.


    Moritaka 270mm K-tip Gyuto in blue super. Paid a little over $300.00 (with tax & shipping) asking $225.00.

    Moritaka does a phenomenal job with the Aogami Super (AS) found at the core of their Supreme series of knives. These knives are treated to an HRC of 64-65 which provides for an edge that can be taken to very steep angles, holds high levels of refinement, and has excellent retention. These knives wrap the AS with iron cladding and a kurouchi finish. Moritaka Supreme knives are handcrafted with wonderful grinds and provide exceptional performance. All of this should come as no surprise given the company’s 700 years of blade-forging history. What is surprising is the price that these tremendous knives are offered at, making them an exceptional value.

    Miyabi pays tribute to the beauty of traditional craftsmanship with the introduction of Miyabi Koh—meaning “light” in Japanese. Classic, simple and comfortable to use in either a Western or Eastern hold, this cutlery collection is as functional as it is beautiful.     Forged from FC61 stainless steel, each full-tang blade is touched by 46 artisans and is hand-honed to an exceptionally sharp 9.5–12 degrees.
