    On Ice cream.

Mix with a little melted butter or oil and worchestershire sauce and brush on grilled chicken or pork in the last few minutes of cooking.

    Blackberry lemonade.

Sending to fellow KKF members sounds like a sure way to get ride of some :)

Agree with Jason -- you may be able to reprocess with more pectin, although it means cleaning/ sterlizing the jars and lids, etc. again. If that does not sound appetizing, freeze a bunch of it in batches (baggies?) and break it out for the uses suggested above. (over ice cream, pound cake, waffles, pancakes, etc.)

You can always reset it with more pectin, lemon juice and sugar. Low sugar pectin work pretty well for this.

I made some spiced peach preserves that turned out thinner than I wanted.
On the bisquick box there was a recipe for shortcake.
So I made shortcakes, heated up the peach preserves and just ladled it on.
    Good Stuff!

I bet shortcakes would be great with your raspberry sauce.
