200 mm AEBL Gyuto

Discussion in 'Brock Cutlery' started by Mark Brock, Jan 8, 2017.

  1. I am just getting ready to handle this one and finish it up in the next day or two.
    Ironwood/ebony/silver ingot.
This one is a relatively thin convex grind, below .010 behind the edge.

I love the shorter knives. They are so versatile. Looks good Mark.

  4. Thanks Guys. Looks like this one is spoken for, and I am going to be going with the medullary ray oak / ebony combo instead of ironwood.

  5. Here is the finished knife. 200 mm , heel height 49mm, AEBL @ 62 hardness. Medullary ray Oak and ebony with silver ingot spacer.
    This one is SPF.
