sharpener for those that cant sharpen/ kitchen cook staff

    that about sums it up. they have my knives but also normal knives other staff (any good chefs that stay working there a while the owner has me make them a knife of there choice). they need something to sharpen but i want them to be using something that will not grind the blades down rapidly. ease of use would be helpful
    so what are teh options?
     
  2. Personally I would not bother with a pull-through sharpener because they wreck blades and the results are sub par with transient semi-sharpness.
    I have a catrahone 3 stage electric sharpener that is for 50/50 bevel blades at an overall angle of 34-35 degrees so no good for asian knives really.A Ruixin pro 009 is brilliant as a manual fixed angle sharpener used in conjunction with various diamond plates but an adjustable eight inch rubber whetstone holder with a double sided 1000/400 diamond plate will do most jobs if you practise and take your time.
