  2. Thanks, Jim. Happy to be here. While I’ve been using and sharpening kitchen knives for many years, I’m still fairly new at the use and care of Japanese styled knives. I say “styled” because over the past couple years I have been gifted four single-bevel knives by my son. These are Kamikoto brand and I guess technically they are not true Japanese knives but rather are made I believe in China but from true Japanese steel. I hope to get some tips on caring for these tools. I also have ordered a conventional Japanese knife which I hope to receive within the next week or so. I’m also a hobby woodworker so I can say I’m fairly experienced in sharpening woodworking edge tools such as chisels and hand plane irons. I’ll explore the forums first and ask my questions later.
