    Here's a few meals from the past week. First, is chicken Ballentine (stuffed with mushroom spinach mixture) over cheesy grits, and topped with a creamy red bell pepper sauce.

    Next is an Asian salad with roasted butternut squash and cashews with an apricot sesame vinaigrette with marinated flank steak.

    Finally ended with Roasted chicken with sumac, cumin, and coriander dry rub with a roasted purple cauliflower and butternut squash herbs salad with olive bread croutons.

    Of course we had some Corned beef Tuesday.

    Braised London Broil in a chili sauce, dipped tortillas in sauce before throwing on the griddle. Topped with white cheddar and cilantro. Tacos doing taco things!
