Questions about Thinning a Takeda Gyuto

  1. Just guessing, 6-8 hours in thinning it. I can’t say that I would do it again, but I’m really enjoying using this knife now.

    I blued the softer steel to help it blend in with the KU finish. She’s not a fatty any more.
