    I really do enjoy mine. I always find myself super happy when using it. Just feels good when prepping/ cutting
     
  2. Got this iron clad aogami super Moritaka 270mm kiritsuki from Cheflarge with the intent of redoing it to something more useful to my cooking style. Turned it into a 250mm gyuto and thinned the heck out of it. The core steel was rather wonky prior to thinning and the cladding still comes to about 2mm from the edge after thinning. The second photo is from Cheflarge, but gives an idea of the choil geometry. The last photo is after thinning. Edge is .005” prior to sharpening. The cool thing was the incredible depth of the imprint which completely survived the thinning intact.

    Yeah. The wife took care of that. Somehow I can’t convince her that they are tools and need to be that long!! Especially for working on fountain pen nibs.

    He does, for sure. This one is a 238 x 53 'S' grind in 1095. Spalted maple with a Missouri whitetail antler ferrule.
