BBQ The thin blue smoke of tastyness

    We do a lot of BBQ in Oz but I am always in awe of the range and depth if the BBQ culture in the states.It is an area of cooking I would love to learn more about.Can you guys in the know point me in the direction of some good web sites?

    Am hoping to fire up the smoker again on Saturday.
    Will have to add some Pastrami, perhaps a yard bird or two and 4lb of wings :BBQ

    Looking good Jim! I bought my son his own electric smoker for Christmas, he smoked this 7 pounder today. I couldn't get a pic of the shred, it went too fast. It was better than anything you can buy around here, I'm a proud papa! tmp_20140222_1904471181655614.jpg

    I have a 7lb butt in the freezer I'm going to have to thaw this week and smoke it next weekend! :BBQ

    Couple questions Jim. What kind of smoker do you have and what kind of probes do you use?

    The smoker is a Baby Stumps Christopher and the probes are part of my digiQ controller unit.

    well not quite custom Mike it's made by the Stumps company and as it's named, is the baby of the line. Stumps makes lots of cookers but many share the same design elements. It's gravity fed insulated box cooker. The fire burns in a box fed from above and ash drops into a tray below, it can run for a long time without being tended. It's very stable and because it's insulated it uses very little fuel, and us Yankees can use it for more than 2 weeks in the year.
