    Thanks Jim and James, looks like a forum I will enjoy. A few familiar names already seen.

    I am a custom knife maker and love kitchen knives, partly for the fact they are more likely to be used than some other styles of customs.

    Ex-chef and spent quite a few years in hospitality before moving on to other things.
