Shiro Kamo visited Cleancut knife store in Stockholm

Discussion in 'Get togethers, Tastings, Restaurant Openings, Etc' started by limpet, Sep 12, 2014.

  1. Well, this was a get together for 30 of us who had bought Shiro Kamo knives from the Cleancut store and were fast enough to register an interest to attend.

Shiro Kamo from Takefu Village came for a visit and showed us how he sharpens his knives. Customers could bring their own Shiro Kamo knives and he demonstrated on them. Customers could also try some sharpening and he gave them advice. He was nice and polite and answered all our questions. :) He also talked a bit about their knife forging process.

I took some pictures, available here:

Interesting that he likes his stone holder to have a raised back end. He sharpens 80% on 1000 grit, doing some light thinning first of the "shoulders" before sharpening the edge. Polish on higher grit, for example 6000. Finish with some edge trailing strokes and then strop the knife on something for deburring. Here he just stropped it on his clothes. Then he tested the sharpness on thumbnail or by reaching back and shave some hair off the back of his neck.

Anyways, it was nice to meet a knife maker. :)
