Matt Imanaka's 270mm W2 Honyaki Gyuto-Hiki - 'The Watermelon Slayer'!

  1. This knife started life as one of three 270mm gyuto-hiki that I had made as stock knives. One went to our own illustrious moderator @James, one sold locally, and the third one was rehardened and ended up being purchased by a gentleman in California. When we initially talked, he wasn't sure what knife to order. I asked him what his intended usage was, and he told me it was going to be a gift for his girlfriend, and that he wanted a longer knife for her to be able to cut watermelon as she often complained she didn't have an appropriate sized knife. I kind of sat there for a few moments, then asked if he was aware of the pricing. He said yes, and we decided on this knife :).

    The good news is, Matt's girlfriend loves the knife, and after a bit of time getting used to it, uses it for all of their household food preparation. In addition, Matt loved it so much he ordered one for himself!!

    Handle - Stabilized 'deep compression' Hawaiian koa from Pete Rushton at Pete's Kustom Koa, with 165yr old wrought iron and nickel silver spacers.

    Every girl needs a watermelon knife! That looks like a really nice one. Fun fact: the majority of women call their watermelon knives "Lorena".
