Lucretia's 170mm W2 Honyaki Ko-Gyuto

  1. Hello everyone! As always, this one was a lot of fun. This was a stock knife that was ordered by a very well known member of our forum. @Lucretia is known to own one of just about every well known custom maker's knives on the planet...and I was honored when she turned her eyes to my work, to say the least :D.

    This knife was actually quite a challenge in many ways. It's very short in length (measured 168mm), but has a full 48mm heel. It is very much a full size, full on lazer gyuto, just...short lol. It packs a tremendous amount of performance in its small frame...much like it's new owner! To maintain even a little forward weight, I carried the spine height much further than I normally do, along with shortening the handle a full 10-15mm compared to a normal sized ko-gyuto. In Lucretia's small hands this should make for a wonderful fit. The end result has a genuine neutral balance (it's stupidly nimble in hand), and is the epitome of my take on a laser. Meaning ultra thin cutting performance, with great food release and noticeable stiffness for such a thin blade.

    Hopefully Lucretia likes it as much as I do ;).

    I'm really excited about this one. After Son and Chuck the Butcher (man, I miss him) made favorable comments about his work, Cris moved right up on my list. This will be my first "laser", so it should be interesting. And it's a looker!

    The only problem is that Mr. Lucretia is making eyes at it now...

  7. I'm excited for you to get it! I miss Chuck as well. Did anyone ever find out what is happening with his knives? If I have the opportunity I'd like to buy back the suji I made for him.

    As for Mr. Lucretia...tell him you've got connections with the guy that makes them ;).

    Thanks brother :D. I'm thinking about working a bit more blade height towards the tip on longer knives as well...or at least making it an option. I need to work out a good compromise though, as tip utility isn't something I'm willing to sacrifice for forward balance.

    They built some display cases at the Green Pig Bistro (his brother's restaurant as I recall) and have the knives on display as a memorial.
