Geometry is King

  1. I recently had the opportunity to experience a gyuto from a new maker which seemed (to my untrained eye at least) somehow hollow ground in the middle third of the blade – like a giant low spot, on both faces, centered halfway between heel and tip. It went through potatoes like buttah.

    On a related note, what is it that makes the Myojin grind so legendary?

    I too have had knives that have had similar spots from the grinding process on The cutting Edge. It makes sharpening a bit of a pain in the rear end to a certain degree. I've always assumed it was from the large sharpening Wheels that they use in Japan. Set the bevels with.
    Sorry as myojon goes I can't answer to that because I have yet to use one LOL
