Chef set in AEB-L and 12c27

  1. Hi everyone,

    Here a couple of knives i finished last week, under request of a chef.

    Santoku 180mm, AEB-L hardened to 60 hrc, 3mm thick.

    Sujihiki 205mm, 12C27 hardened to 60 hrc, 2,5mm thick.

    Both have ebony and boxwood wa-handle and are satin finished.

    Any criticism or suggestion are well accepted!

    very clean. I'd like to see more images. from directly above as the perspective makes it hard to see the profiles.

  6. @cheflarge : Yes! Their new owner is a guy who works in a two-starred Michelin restaurant

    @MotoMike : thank you! It was the first time i made oval wa handle, i still prefer octagonal shaped ones, but anyway they are pretty!
