52100 Gyuto 210 x 54mm

  1. This one's coming up in the next few weeks. I'm working on a steak knife set too, but I have this one about done so it is in the queue.
    52100 @63 hardness. 210 mm by 54mm convex grind on a more traditional Gyuto blade.
    This one is a pretty radical taper from 3.55 to almost nothing at the tip. Grind taken to almost zero at the edge.
    Not sure if it will be a combination of rayed oak and ebony or ironwood and ebony.
    If I get ambitious I may even try a metal bolster. That remains to be seen...
