32 Shea 270mm W2 Honyaki Gyuto-Hiki

  1. Heya guys,

    So, this knife was one of the three gyuto-hiki that I'd done and put up for sale together. James bought the first, then the second became the 'Watermelon Slayer', and this third unloved brother sat unfinished on my shelf for months and months. Finally, I was approached by a local knifemaker who was interested in doing a collaboration of sorts. Apparently, he'd setup a deal with a local boutique coffee house/cafe/wine bar 32 Shea (if you're local, you've gotta try their bruschetta!!) to make their head Chef Theresa a kitchen knife for her 3yr anniversary. The original plan was for me to do the blade, and for him to do the handle. Time went by and he ended up not being able to do the handle work due to circumstances beyond his control, so I went ahead and just put the entire knife together.

    This is the result.

    Steel - AISI W2 from Aldo at New Jersey Steel Baron

    Handle - Stabilized (Arizona Ironwood LLC) purple (not the pink stuff from the auction razor...this piece was GRAPE on the outside lol) dyed maple burl, with nickel silver and a gorgeous violet blue dyed Oregon maple spacer from @Burl Source.

    All in all I'm really happy with it. It cuts like a dream, and the colors are Chef Theresa's favorites. I even went a little bit farther than I was asked and custom dyed the saya a mix of red and blue to give it a purple hue. The results of that exceeded my expectations as well.

    All in all, a win/win I think! We'll see tomorrow how she likes it ;).

  11. Thanks guys! Mike, lol...if I could have, I seriously would have...lol. Maybe it would have helped me to influence the outcome more than actual 'evidence' did.
