240mm kiritsuki gyuto

  1. I made this for Chris Shepherd, James Beard award winning chef at Underbelly in Houston. It's 240mm AEBL kiritsuki gyuto. Handle is Birdseye maple with blue dyed ambrosia maple trim. It is a tapered octagonal configuration. Very ergonomic and comfortable.
