Tadafusa Santoku

    Here's a nice little knife that doesn't seem to get a lot of attention. It's a Tadafusa santoku in blue 2 with stainless cladding--right around a hundred bucks at aframes and EE. Takes an amazing edge, and after sharpening I polished the bevel with one of Maxim's synthetic 1k fingerstones. The handle is from Matt Stephens (kalaeb); my apologies but I've forgotten what the wood is. Tadafusa makes gyutos too, for the santoku-averse. :)

    Is the cutting edge a 1k? Or is the primary bevel taken higher then blended with the secondary bevel with a finger stone?

    Sorry I wasn't more specific. I took the cutting edge up to a Suehiro Rika 5k. The 1k fingerstone was used to polish and "color" the bevel roughly 1.5cm above the edge. I've used uchigumori and hakka natural fingerstones before, but I'm favoring the 1k synthetic at the moment---easy to use, very even results. It leaves a dull mirror finish on the hard core steel, and a nice hazy finish on the softer cladding.
