BBQ The thin blue smoke of tastyness

    The good ole stall will get ya every time !!! This is why I generally dislike cooking briskets .....

    Yeah, the brisket looked good but was definitely ruined by the knife...never had a chance.

    But first…pork belly! Bout to drop this on the smoker. 250-275 until around 200f. The pork butt should be ready to go on this evening too.

    4 probes monitoring the cook. Maybe overkill but my first overnight cook and I got the probes so why not???

    seems pretty consistent with the set temp. The 39f is in the butt.

    Best pork butt I've done yet! Time on the smoker: 16 hours. Time at rest in the cooler: 1 hour 45 minutes.
    I did 200f for about 12 hours. Then I intermittently cranked it up to 325 over the next 4 hours to finish it. Otherwise I think it would have been a 20+ hour cook. It was stalled in the 140f range for a good 2 hours.
    I wrapped it in foil at 160f.
    I pulled it off the smoker at 195f

    Drizzled a little Hog Wash over it before wrapping and putting back on the smoker.

    You got it! I'm very happy with it. It will be breakfast, lunch, and dinner today. Then I'll vacuum seal the rest.
