  1. I've been meaning to post up a bunch of my knives for a while so here we go.

    The yanagiba and deba are also from Sakai Kikumori (270 and 165) and theres a little cheap deba I purchased from Protooling.

    Almost forgot the Masakane SK 120 petty!

    I don't have the Okubo nakiri or the 210 Ashi OEM gyuto anymore. That Okubo was a little workhorse and had the hardest steel of any knife I've used. I feel like I should get a big gyuto from him at some stage.

  3. Thanks! I feel like I should branch out a bit and get some wa handled knives again. So many makers I want to try who generally make wa only. I do just like the aesthetics of the western handle over a wa handle.

    Great collection! I’m a huge western handle guy myself. I wish there was more high end Japanese yo gyutos to choose from. Particularly from Sakai.
     
  5. I'm with you. I'm not such a fan of wa handles and it's stopped me from picking up a couple of knives in the past. I know in a pinch grip it doesn't make that much difference, but the added weight from the western handles is nice. The Kogetsu knives above are very thin from spine to tip but the handles are heavy, giving them a great solid feel in use.
