What has been your go to knife for the last week ?

    I have soooo many to pick from , but I have been testing out a Magnacut Gyuto from Black Customs, and have been very impressed with it. There are a few F and F things that I found , but overall its a solid, well made knife, heat treat seems to be very good, and its a very good looking knife that has pleased me greatly ! It also took the end of my thumb, so it has tasted blood and thirsts for more !!!

    The handle is also interesting, as it is square on half and rounded on the other.... It is actually very comfortable in hand, and the golden Acacia w/ turquoise true stone spacer is pretty damn easy on the eyes !!

    cant go wrong with a CCK.... I have a CCK K tip cleaver and it is an excellent slicer , and takes a wicked edge
     
  3. My Shindo 240 made me two gallons of pico de gallo this past week. I'd show a picture, but we ate it all.
     
  4. This : ) 180 Sakai Kikumori nihonko gyuto. A 180 gyuto was my first knife and although I love a big knife these days, I still have a soft spot for a 180 gyuto as my do it all knife.

    My partner is from western Europe and about 15 years ago we visited her uncle. He gifted me this bottle opener that he made. At the end of the monthly paycheck there is usually a lot of days left, so it is common to supplement with 'stuff from work', so the screw part is titanium ;)

    Imagine his colleague who made an ice-drill (to drill holes for fishing) out of titanium....

    Guess the screw design isn't optimal (bit thick) but I enjoy using it on holidays
     
  8. You know, the thing about a well-sharpened MagnaCut, is it lasts forever in a home kitchen

    as an experiment I said I wouldn’t sharpen it, would just use it, and I think it’s been about a year now and it’s still shave sharp with only the occasional strop

    There is no fun in that !!! I don't use mine everyday , I try and rotate through knives, so mine should last at least 10 yrs

  19. It's nice, maybe a bit flatter than your typical mono gyuto and has a lower tip too. It needed some work to tidy it up out of the box and could still do with some extra thinning behind the edge.
    The steel is nice and takes a good edge but is pretty reactive even by carbon standards.
    There are still some available from an Aus ebay seller but unfortunately they can't be shipped overseas with the rosewood handle
