I have acquired a few super steels and figured I would share my experiences in sharpening , my tools and whatnot and maybe help others along the way ......

My Magnacut Gyuto needed a better edge , so I took the dive. I'm new to diamond sharpening stones, so I picked up a Sharpal 350 / 1200 combo Stone on eBay for about 60 bucks , and I highly recommend it . Technique was no different , the same old back and forth gently, but man the sound of it is awful to my ears ..... A little water on the stone took care of that for the most part . Everything else was business as usual and it worked a treat.

Finishing wasn't going to work either, as I usually finish on a 2k Green brick of joy, but it wouldn't phase the magnacut , so I broke out the diamond strops and did a quick progression...... 1 micron, 0.75 micron, 0.5 micron, just to see where the edge went..... The strips used denim with magnet backing from Chef knives to go, and loaded with their diamond paste. All total, the strip setup with metal base was like 60 bucks ? Not to shabby , and it works great. Their paste isn't the best , but it gets the job done for sure.
The progression went swimmingly , and I was left with , what is potentially, one of the sharpest knives I have been able to produce yet. In fact, I subsequently used it to seamlessly remove the end of my thumb , but that's what I get for not paying attention , I guess .

So there ya have, my satisfactory results and how I got them . Hopefully this is helpful to someone , somewhere for a simple , no fuss setup

  2. Nice. I avoided opening the thumb about your thread. Glad you have a super sharp magnacut though!

Probably vlbeat if you are squeamish ....lots of internal life juice on the outside ..... But my knife is definitely sharp. I have been working on improving my technique , and it's paying off in spades .... And thumbtips
