    That looks fantastic James.
    That smoker looks pretty nice too.
    I got me a green egg a couple of years ago and it is a game changer for sure.
    Never had so much control over the process, and the results, well, your pics tell the story.
    Nice work!

    Thanks mark, this side of the forum is def not for the hungry lol. And I like this cooker, it's a lot lighter then a ceramic so I can move it around. Doesn't have the fancy split system of the big green egg but most of its accessories work on this. I being insulated makes it a year round cooker as far as I can tell. So far I've been happy with the food it's given me.

    All the food looks delicious! Great job. I've been using an old kamado grill that's roughly 20 years old and falling apart now. But I'm crazy, and am actually thinking about building something that would allow me to burn my own wood to make my own coals, and use the coals to maintain the heat and smoke. I know I'm a bit weird for wanting to make the process more difficult :).

    More like a separate fireplace to burn wood and create my own coal. Then have a box for the smoker next to it, so I can transfer the heated coals easily. The grill would be similar in size to the Santa Maria grill, but enclosed similarly to the barrel smokers.

    Basically, I'm just creating more work for myself, and doing things more how a pit master would do them.
