My first big smoke

    In the mean time here's some warmup while I got use to me new toy. A little backstory, I've always had gas grilles. My last one hit ten and is still going, a charbroil commercial 4 burner. But I wanted something more diverse, so I got a broil king keg 5000. And went to town on the charcoal kegger. IMG_20200805_173935.jpg

    I got out of bed, to put this guy to bed. Burning some big green egg maple charcoal. With some apple and pecan wood tossed in.

    Guess we will see more in four hours at first check.

    Just over an hour in, we are holding 240 steady. So far so good. Like the smell,... So good

    Not even sure what internal temp range I should be looking for though. Should I be shooting for around 200 give or take 10 degrees or so to check tenderness at ?

    Looking very good James. Anywhere from 190 200 could be done. Let the meat tell you.
    It may "stall" and hang up at 160 170 for a long time..no worries

    I know, this looks good right ?. Well scary moment time, I didn't start with enough charcoal, I had to pull the meat off the grill, pull the grill, pull the defelcter pan I was collecting juice in (which I grabbed since I was there) to add charcoal. O had planned ahead for this incase it happened so I had s game plan in place which went off without a hitch.

    We are doing okay again for those of you who have been dying to see my butt crack, there it is

    And we are back to 180, last time I dropped back to 178 and stalled out) seems to be moving again. I'm getting excited
