Honbasuke for Takeo Murata Santoku

    I bought this Takeo Murata 180mm santoku, blue #1 cladded with KU finish intended to be a gift to a friend who has used her 20-year-old Aritsugu santoku until it has become a shorty.

    It was covered with lacquer from factory, and has the usual sand blast finish. So, I gave the bevel a bit of flattening mainly with bester 700. It took a bit of time to get even colour bevel on that stone. Factory grind was ok, had a bit of unevenness, but not tat bad at all. Then it was finished with JNS 800 which was an easy stone to give a matt grey even finish, and finally, a touch of tiny primary bevel.

    Looks great. There's something really rewarding about working the bevels of these kinds of knives....they can perform really well, they are easier to thin and maintain, and they look good.

    Thank for your compliments. It already cuts well from the beginning, and I tested the knife a bit before fully finish with evening out the bevel. Edge is a touch thinner than factory after all the work, so it still cuts very well.

    Here're tip and choil shots. It is not the thinnest one I have had and seen, but still decently thin. Tip shot for a santoku looks a fair bit more thicker than a typical shot of a gyuto of similar thickness due to tip profile.

  7. I know this is an old thread, but just picked up my second Murata today. I have much fancier knives, but dang his stuff just hits me right.
