Deba Project - WIP

  1. I've been wanted to make a deba since I started making knives, and I've been able to push it out until now.
    Primarily because I needed the experience of a few years of grinding and also in design.
    I've recently had a request (now two requests) for a Mioroshi Deba, and I'm pretty excited to move on this one.
    I'll be working up a few each in AEB-L and 52100. These are between 4.1 (AEBL) and 4.6mm (52100) starting out, and I intend to keep all of that thickness possible during the process.
    These will be the traditional deba grind.

    So I'll be doing a loose WIP thread to track the progression. These will be out to HT for weeks, so it may be a while before there is much progress.

  3. It's taken a while, but finally getting to these two. Rough ground. Need to clean them up and fine tune on finer belts.
    Amazing how differently AEBL and 52100 feel on the grinder. Similar to the difference on stones I'm sure, but probably more pronounced.
    I like the 52100 on the grinder a bit better, but neither are bad. Just different. 52100 is more crisp.

  5. Wow! Very interesting project Mark!
    I love deba, it's the best choice when you have to process some fish, from the bigger tuna to the smaller mackerel.
     
  6. A few pics of the first of these two that I've finished. This one has shipped already. Everything is finished except sharpening in the pics.
    Ironwood/silver/blackwood handle, fairly traditional octagon.

  11. Howdy folks.
    I've not been making many knives lately, and the few I've done have been hunting or fillet knives. But I finally made myself drag this M Deba out to the garage for a session with the grinder. I'll be finishing this one up over the next few weeks.
    Lots of sanding and stone work at this point, but it's getting into shape. Amen. :)
    I grind the ura with a radius platen vs a wheel and find it very effective. This one is 36". I use the same platen to hand sand the ura after grinding to keep it all kosher.
    This one with be handled with some combination of Spalted Maple, silver and ???

    It really does feel great to be getting back to the J knives. I love them so.

  13. Thanks Jim. I have a few more blanks already heat treated. These are far more difficult though than say a Gyuto. And sharp!
