TOYAMA NOBORIKOI or SHIGEHIRO

  1. Hi guys, I'm very new to the Japanese kitchen knife scene and have been ordering a few different knives lately.. Two brands I've been interested in are Toyama Noborikoi from JNS and Shigehiro from buttermilk. Anybody have any opinions on either? I would like to get some opinions from you seasoned guys as opposed to just my own. Just for the record I just purchased one of each a few days ago. Thanks!
     
  2. Is buttermilk in business? Toyama is supposed to be very similar to Watanabe which means great to me

  3. I used my Toyama 210mm nakiri today to cut all my greens for the week.. wow I am impressed... I breazed thru everything right away and very happily..
    the Shigehiro just arrived due to not being shipped out a week after I had placed the order and after I had emailed Sam to see when it would be shipped. Upon opening the blade looked very nice but it appears to have a chip in the tip. I will post some pics to see if kayne I'm mistaken.. I am a little knew to J knives.

    Wish I could help with opinions. I don't have either one. Will have to experience vicariously from others for now.
