about Nakiri Knife?

  1. Hi Everybody,
    i'm Monica from Milan,
    just on line for the 1 time
    i'm a chef and owner of my catering company,
    i'm passioned of my job, i'm passioned of a knives too...
    from the last 3 year i start to order and buy a special japanese hand made knives, 1 in a year...
    so every year i love to start to think, planninbg and buy a dreamer knife..
    this time i'm lookong for a Nakiri knife,
    i'm left hand...alredy difficult to find a left hand knife....
    so Nakiri can be right for me...
    have you some suggestion?
    i would like to have Shigefusa or Yoshikane but i can'f find on line.....
    thanks!
     
  2. Cleancut.se in sweden have yoshikane (also consider wakui) They're good to deal with and speak good english. If the site is difficult for you send them a email instead :)

    I may suggest a blade from Watanabe. You can buy directly from Japan and his communication is very good. Not sure of the length you are interested in but his 180 is blue steel (but stock comes with a plastic ferrule). I believe his 165 comes with a horn ferrule...both knives come with stainless kurouchi finish and are around 20,000 yen plus delivery. I believe he will do left hand specific but I'm not sure of the additional charge...may be worth an email?

  4. His knife are 50/50 so no problem. (I am left handed also). He can do a more left-handed oriented if you want and he will reverse the D shape handle for less then 5 euros.

    However, if you could describe the type of nakiri you are looking for, it may be easier to recommend you smth. Are you more of the very thin or more on the robust type? etc.

    Personally, I have a Teriyaki Fujiwara Nakiri that I like a lot. I used to have a kurosaki, but I did not like it a lot. I read only excellent things about watanabe Nakiri, and I am waiting for a Wakui (a recommended by @Robin): I tested one and I found it excellent.

    If it doesn't have to be Japanese, @butch has some he just finished up, and I think they are the best on the market.
