fresh fennel

    In the past I've only used the seeds of fennel. picked up a couple of bulbs the other day and after some minor experimentation, wonder how some of you use it. Pray tell?
     
  2. Slice, season, olive oil, grill, fry or bake. Nice with a cheese sauce. Blue cheese sauce is nice.
     
  3. Fennel is actually excellent with fish, or as it with oil and lemon. But also:
    - Raw in salads (put very small quantities)
    - on the BBQ: make longitudinal slices (be sure to include a part of the bottom in each slice so that it does not designate), season and olive oil, cook for a couple of minutes on each side, serve with a trait of lemon/lime juice
    - With fish: when you cook fish you can put some in the water when you poach it, or just along with it if you roast it.
     
  4. love using it in a salad... Thinly sliced fennel, thinly sliced apple, both red and green, and just drizzled with some nice olive oil, or a simple dressing.

    I like it in an Italian-style tomato sauce. Adds nice flavor and some sweetness.

    Thanks Lucretia Et Al. I'll be working something up. This dang heat wave makes grilling less fun.
     
  8. Goes well with fish, salad or even tea.
