  1. Like that lacewood sheath, have some of that and some leopardwood. I'm inspired way more than maple or poplar.

After 2.5 years of waiting I finally got my self a custom gyuto ( sort of ) 280mm tall gyuto that I found little too heavy and instead of regrinding and re polishing I have decided to keep it and made a replacement for the person who commissioned it . It is a true workhorse (330 grams ) , forged from 52100, asymetric ground

  3. Very nice profile and grind Mert. Looks just right for a chefsmith :)

    She's a beast!

  4. @chefcomesback I hope you weren't a pain in the ass customer :p. Beautiful knife Mert.

  5. Bought this cool little blade today: Teruyasu Fujiwara 20 cm gyuto. Brought a smile to my face when using it. It's a great cutter with lots of character. :)

  6. hiho!

@limpet This one looks interesting.. is that a special budget line of Fujiwara ?

  7. Yes, the handle is supposed to be a cheaper handle, but I like it. It thinks it matches the rustic style of the knife perfectly. Bought this one from Cleancut in Sweden.

  8. I like it so much that i'm thinking about getting one as well... And a petty. :)
A proper T-F for this price is quite appealing anyway.
I wish they had a 24cm one as well.

Check out Teruyasu direct from their website if you want a 240. Runs 29000 Yen. (270.00 ish USD)

  13. Indeed! I was in fact so impressed by this small gyuto that I went to Cleancut today and bought the petty as well. I was glad I went there in person because there were a few differences between instances. I had three pettys in front of me and selected the thickest and tallest. Also it had a cool "smudge" in the nashiji finish which added to character. ;)

  14. Hah, good for you, i wish there was a store like this anywhere near here.
Mind you, i have ordered the gyuto last night, but it wasn't as cheap with the extra 200SEK intl. shipping, so i thought i might as well order something else as well. :)
A nice Hayashi petty blade and a handle.

  15. Damn! I wish i had Cleancut nextdoor ;)

Those T-F's look pretty nice.. well the Wood.
Ok i would totally rehandle it, but the performance of those blades must be awesome.

very nice.. but one knife at once is enough ;) .. for now..
ill go for a xerxes sc125 petty (german smith with awesome stuff) but will be 2 months list at least..

the only thing that keeps me away from the T-F's is their weight.. or how heavy is the 210mm one?

    best regards, daniel!

  16. Lucky you! Cleancut is far away and shipping is $%/&%ยง%& expensive.

  17. No adjustments. It came like that OOTB.

  18. On the 210 mm one, the blade actually measures 200 mm from the handle to the tip, so it's a bit short. Height at the heel is 50 mm. Weight is 172 grams, but then again it is a western handle with balance point at the neck/heel.
