Scorpion Forge...Stainless??

  1. Well my friends!! I finally decided that it is time I put in the effort necessary to get a more 'affordable' line of knives out to you all. I'm aware that the pricing of my carbon honyaki knives is out of reach for some...I can't afford them myself, lol...so over the last four months or so, I've been putting the pieces together to get something done in a streamlined format that has many of the popular 'options' my carbon knives have, without killing myself in labor or killing my customers in pricing. The solution came in the form of various profile and geometry AEB-L stainless steel gyuto, petty knives, and parers. The idea is to offer 90mm paring knives, 120mm 'tall' petty knives, 150mm 'tall' petty knives, 220mm gyuto, and 240mm gyuto, in both the standard and XH geometries. Pricing will run between $450 and $850 depending on profile and geometry selection, and the knives will all include my flared dual taper handle. The spacer arrangements will be kept simple and the choice of woods limited in order to help me keep the time down. Blade finish will be a high grit vertical belt finish standard, with a high grit horizontal belt finish being a $25 option. The knives will basically be available on an 'as they come' basis, though I've taken a few 'orders' within the first batch of 15 knives that I currently have profiled.

    Everything was moving forward nicely and I had actually JUST begun work on the first batch (I got a double handful hardened), when I got the go ahead to move lol. This obviously put a huge delay on everything, which sucked, but it also gave me the ability to try to set my shop up with a more streamlined process in mind, which is definitely to the good.

    So with all of this in mind, I'd like to show you all the first in what I hope is a long line of Scorpion Forge AEB-L kitchen knives :D. The blade is 120mm long, and 42mm tall. The spine is around 4.5mm at the neck, and well over 3mm over the heel, with substantial distal taper to the needle fine point. The handle is professionally stabilized spalted mango, with copper and G10 spacers. Pricing for this knife is set at $550 (I'm throwing in the horizontal finish) plus actual shipping due to the XH geometry, and it is available immediately.

    Here is a video I made the other day showing more of the knife. I had initially not planned to release the AEB-L announcement before the ECG, thus the lack of detail in regards to what the knife actually was...but since I'm not going to be making it...I thought I'd share with you now.

    I just realized I forgot to list the knives I made in this batch, and which are available for you all currently!!

    The 15 knives are broken down like this:

    3x 240mm XH gyuto
    1x 240 standard gyuto
    5x 220mm XH gyuto
    2x 220mm standard gyuto
    1x 150mm standard petty
    1x 120mm XH petty
    2x 90mm parer

    Of those, these are what is still available:

    2x 240mm XH gyuto - $850 each
    3x 220mm XH gyuto - $750 each
    2x 220mm standard gyuto- $650 each
    1x 120mm XH petty (above) - $550

  7. Yeah...I feel the same guys. There's just no way with the pure cash outlay, and zero income of the last 45 days. Unless something miraculous happens that is, which I'm still crossing my fingers for.

    This made me LOL :D.

  12. Thanks Al! It could absolutely be something more fitting for a busy kitchen. No real care necessary beyond the care given any quality knife is a nice bonus when things get busy for sure.

    As for the ECG, I agree Bob...I was definitely looking forward to meeting all of you!

  14. Nice @CrisAnderson27. Have been wanting to get quench plates on my own and that hinge is simple yet effective. Far simpler than the design I had in my head.
    Keen to follow your progress with the AEB-L as well.
     
  15. Thanks man, lol. I beat my head against a wall for two weeks trying to overcomplicate the hinge thing. Eventually I just said...'What's the simplest way to connect them....?'. Once I had that, it was easy to figure out how to make it self adjust :).
