  1. Just got this in the mail, couldn't help but cut up a left over half onion.

    Absolutely beautiful knife, wish the 210/240 were at the old price still would definitely snag one up.

    Found that beast in the Turkish souvenirs shop that had a small section with kitchenwares. Some carbon beast that should be very effective during zombie apocalypse. I didn't bought it though.

    That knife is called "zırh" ( armour in English) it is often used to chop up lamb pieces along with tail fat for minced kebabs. You will use it by cutting regular chunks and then start rocking by holding your off hand on the spine near the tip and use like a mezzaluna by the time the texture gets finer . Some pastry shops use the same knife for portioning savoury pastry called "börek "
     
  11. Nothing illustrious but my father gave me these last night. He's had them since about 1974.
    Spent the morning doing a quick touch up on the handles, were rough and as dry as a desert fart.
    The ham slicer is about 260mm(scares the crap out of me)
    The butchers is about 180mm.

    Tansu Knives western gyuto. 1084/15N20 damascus. Stabilized amboyna burl handle with a brass bolster. Mert's knives just keep getting better and better. Just got it yesterday, so I haven't had time to use it enough to comment on geometry or profile.
