    Bucatini is what old school New Orleanians use to make Mac and Cheese. It is really custardy with a bunch of egg in it, almost to the point of casserole.

    My kids favorite shape. "Spaghetti with the hole in the middle". I'd like to hear more about NO Mac and Cheese.

    This is the Mac at Rocky and Carlo's in Chalmette, it's the standard for that style of Mac. It's an amazing, unapologetically Sicilian place. The house salad is on the menu as a "wop salad".

    Picked up a couple pork butts to smoke for the last bbq of the season. The weather forecast was for sunny today and rain starting tonight, so needed to get them done today. So once I got them on the smoker the clouds rolled in and it was chilly and windy all day, making it a fight to keep the smoker temp right. I ran out of hickory. Finally it was time to pull them off the smoker, and I dropped one of the butts right in the middle of the driveway.

    :mad::mad::mad::mad::mad::mad::mad::mad::mad::mad::mad::mad::mad::mad::mad:!

    Some days you just shouldn't cook.

    I managed to save most of it--primarily lost fat and bark. I said many, many dirty words, tho. Later when I went out to do some clean up there was a scruffy little cat hoovering down some pork fat. The driveway was pretty much licked clean.

    On a positive note, found some bucatini at the grocery today.

    I can almost taste your butt from here, Lucretia.

    Been baking a bit today, getting a bit better at baguettes shaping. Got the colour, texture and taste quite good today. Quite nice for a yeast dough, I think.

    Haven't bought chorizo recently, but cook a flat bread with salami, fetta, and a bit of tomato sauce, along the line Mert did a few pages back. And this was for lunch.

    Looks like a winner. I used to go get lamb neck, braised and deep fried anytime I wanted w full food coma.
