  1. Holy smokes Souli! Great score! Bill's Dragon's Breath is one of the best and most well executed patterns out there! The only pattern on par is his Serpentine Dragon's Breath.
     
  2. I personally don't mind the reactivity. I don't know why it took me so long to figure out that having a dedicated oil cloth is a good idea. However, I just cook at home now, so the extra care isn't a hassle like it would be in a professional environment. I love how stiff these knives are, due in part to that super chunky tang.

    I thought Carter uses white steel exclusively...

    That knife is several years old, from the time when Murray made knives in both shirogami and aogami super. He switched over to using only shirogami in January, 2012, and stopped making custom knives in April, 2013. He did use his existing stock of laminated aogami super to make a few knives after January, 2012, but I believe that stock has been exhausted.

    Dave Martell did an incredible job refurbing this 50's F.Dick for me.
    The blade was repaired and refinished, finger guard removed, bolster replaced and a new Kingwood handle. It is a real beauty.

  16. I've got to say I agree with you completely man. I'm not a huge fan of pattern welded stuff (in kitchen knives...multi-bar twist cores with high layer edges in double edge swords now...THAT is something!) beyond san mai, and some random stuff...but Bill's work is just beautiful.
     
  17. Yoshiaki Fujiwara Santoku 180 in white #2 arrived last week. As always, I'm really impressed by Kato-san's knives. And I never get tired looking at those choil shots... ;)
